Hi Mike!

Even though garlic can be a pain to peel and chop, you do want to always use fresh. To make things easier on yourself, I recommend buying the pre-peeled cloves you can find in a bag, especially if you use garlic a lot. You don’t want to buy minced garlic from a jar, because these varieties will have a really sharp tang (usually from citric acid) that doesn’t give you that fresh garlic taste that we Italians particularly swear by! Or, they’re chock full of oil adding unnecessary calories.3293861419_fd09edc59e_z
